Blue I Bistro is more than just a restaurant, it's a comeback story built on community, care, and culinary passion. When an electrical fire forced the closure of our original Blue I Eatery on Honda Drive in March 2025, owners Tracy and Loren Peters faced a difficult crossroads. But with the support and encouragement of loyal guests and friends, they transformed the old downtown Lincoln mercantile into something truly special, a warm, inviting space where familiar flavors meet fresh beginnings.
Set to open in October, Blue I Bistro celebrates everything that made the original restaurant beloved: high-quality, freshly prepared food, friendly faces, and an atmosphere that feels like home. Every dish is crafted with intention, from locally sourced ingredients to thoughtful presentation, ensuring each meal reflects the same heart and soul that started it all.
